Ingredients
1 cup lentils (rinsed)
1 cup chickpeas (cooked or canned)
1 can diced tomatoes
1 onion, diced
2 garlic cloves, minced
1 tbsp cumin, 1 tbsp paprika
4 cups vegetable broth
Salt and pepper to taste
Preparation
1. Sauté onion and garlic in olive oil until soft.
2. Add cumin and paprika, and cook for 1 minute.
3. Add lentils, chickpeas, diced tomatoes, and vegetable broth.
4. Bring to a boil, then simmer for 30-40 minutes until lentils are tender.
